How we roast:
Our coffees are roasted to order, to ensure your coffee reaches you as fresh as possible we roast on the second Monday and the last Monday of each month. Innovation Series Coffees are roasted exclusively on the last Sunday of each month.

Washed Process: Double Anaerobic Fermentation, Dried in a Dark Room on Raised Beds
This Tabi variety undergoes a two-stage fermentation process. First, the cherries are anaerobically fermented whole for several days. After pulping to remove the outer skins, the seeds are returned to ferment in their own 'mosto' (juices) for another 24 hours. The process is completed with washing and drying in a dark room, resulting in a coffee with a complex flavor profile

Three years ago Fabian decided to replant less than 500 trees of the Tabi variety, a sister to Typica and bourbon varietals, on his farm Bella Vista (Beautiful View). Owned and operated by Fabian Echeverry and his family, we're proud to be working directly with them on delivering high-scoring speciality coffee.
