Brewing steps

  1. Pour 50 mL of water in a circular pattern at 70⁰C and let it bloom for 30 seconds.
  2. Add 50 mL of water in a circular pattern at 95⁰C and wait until 01.00.
  3. Add 50 mL of water in a centre pour at 95⁰C and wait until 1.30.
  4. Pour the final 50 mL of water in a centre pour at 95⁰C. The brew should finish between 02.30 and 03.00.
