Process: Washed process. Double anaerobic fermentation. Whole coffee cherries were fermented in two stages for a total of 48 hours.

Three years ago Fabian decided to replant less than 500 trees of the Tabi variety, a sister to Typica and bourbon varietals, on his farm Bella Vista (Beautiful View). Owned and operated by Fabian Echeverry and his family, we're proud to be working directly with them on delivering high-scoring speciality coffee.
Mikava is excited to bring this beautiful coffee from one of our neighbouring family farms and share it with you.
This Tabi was selected to undergo a double anaerobic washed process. It starts with rigorous hand-picking and selection of only the ripest cherries to achieve the highest sugar content aiding in the allowable fermentation time. Cherries are fermented in whole cherry for 32 hours, pulped, and completed fermenting for an additional 24 hours indoors in a low-temperature environment. This is what makes this coffee taste so amazing! Your tastebuds will be over the moon, LITERALLY!!!
Once complete, coffee is then washed, sorted again, and dried to 11% humidity on raised beds. After the coffee had time to acclimate it was milled, sorted, and shipped by air to our roastery to provide the freshest coffee direct to your door. We hate stale, flat coffee as much as you do!
